1 20-ounce can crushed pineapple, undrained
2 cups plain flour
1 cup chopped pecans
2 teaspoons baking soda
2 cups sugar
3eggs
Mix above ingredients with a spoon—NOT a mixer. Bake in a 9 X 13-inch pan at 350 degrees for 45 minutes (35 minutes for a glass dish).
While cake is still hot, top with the following ingredients, well mixed:
8 ounces cream cheese, softened
2 cups confectioners sugar
1 stick melted butter
1 teaspoon vanilla
